Grey Goose Cocktail Dinner - Wednesday, August 25th, 2010


Hello,

It is our great pleasure to invite you to a remarkable evening of food and cocktails at Checkers Restaurant, in Hilton Checkers Hotel, in downtown Los Angeles.

Please find below a copy of the menu for the upcoming Grey Goose/HiltonCheckers Mixology Dinner, to take place at Checkers Restaurant on Wednesday, August 25th. We invite you to join us for what will prove to be a very unique dining and drinking experience.

The principle behind the dinner is to find the middle ground between progressive takes on classic world cuisine, and the very cutting edge of modern cocktail mixology.

Between the chef and the mixologist, we have travelled around the world to collect the most distinctive and highest-quality ingredients, in order to push the boundaries of how modern fine food and beverage defines itself. While eschewing the traditional "wine and food" pairing structure, we are nonetheless standing upon the shoulders of this time-honored tradition to elevate the "paired dining" experience to something more modern, more progressive, and completely unique. Your palate will be engaged yet surprised, and challenged yet beguiled. On this evening, we will be offering your palate the opportunity to enjoy original foodand cocktails, the like of which simply do not exist anywhere else in the world.

You will come to understand that the roles of the chef and the mixologistare not so very far apart; each carefully selects raw materials, blends and develops them in careful measure, in order to reach a final synergy - the point where "the sum is greater than the toal of the parts."

We will have a welcome reception and beverages on the patio outside the restaurant, beginning at 6:30, where there will be a chance to meet Checkers' new Chef de Cuisine David Baker, and Master Mixologist and North American Grey Goose Brand Ambassador Guillaume Jubien, as well as the other guests.

The dinner begins at 7:00, and the meal will be served shortly thereafter.

There will be an introduction of the cocktails and the food before each course, and an opportunity to meet with Chef David and Guillaume, and enjoy further beverages, at the conclusion of the evening.

The price for the dinner will be $80, not inclusive of a discretionary gratuity for your servers.

Complimentary valet parking is included for all guests of the dinner; please present your valet ticket for validation at the end of the meal.

Seared Japanese Hamachi - A beautiful Yellowtail sushi prepared from youthful and delicate fish, which is flash pan-seared and paired with chili oil and mango sashimi - thinly-sliced raw sweet mango.


Paired with the "Yakuzu" - no, not the Yakuza, but equally edgy! A balanced but acidic citrus-laced combination of Grey Goose Le Citron, fresh unsalted yuzu juice, two types of orange curacao, and fresh mango puree, floated drops of wasabi oil, and rimmed with salt and smoked paprika.


Tempura Caledonian Prawns - Lightly battered farm-raised "sweet water"crispy blue prawns, served with a delicate tofu and green bean salad, and paired with a tart lemongrass vinaigrette.


Paired with the "Cloud9" - This course is perfectly paired with a cocktail made from Grey Goose La Poire, a balance of dry sake, fresh lychee juice, fresh-squeezed lime juice, garnished with a strip of fresh lemon grass, and topped with a coconut espuma.


Crisp Confit Jidori Chicken - The finest chicken that money can buy, prepared in the tradional French manner: it is rendered in its own juices, and perfectly paired with a medium-spiced red curry risotto.


Paired with the "Indian Summer" - Grey Goose L'Orange, fresh-squeezed lemon juice, blood orange puree, boutique-produced cardamom bitters, and lightly-infused spiced simple syrup.


Braised Natural Beef Shortribs - Boneless American Waygu short ribs, seared then braised, and finished in a Jerez vinegar reduction. Topped with a ginger-garlic barbecue glaze, and complimented by Napa cabbage slaw in a citrus aioli.


Paired with the "Green Eye" - Grey Goose La Poire vodka, St Germain Elderflower liqueur, fresh pear nectar, fresh lime juice, fresh cucumber juice, and an infusion of mint, basil and oregano.


Valrhona Chocolate Panna Cotta - with toasted hazelnuts and beautiful cherry-balsamic sauce.


Paired with "Le Temps de Cerises" - Grey Goose, sour Morello cherries, a liqueur made from the cherries, Licor 43 (with flavors of vanilla, citrus, and herbs), frangelico, a dash of dry sherry, chocolate bitters, and a Morello cherry bruléed meringue.
